Hi! My name is Marites. I am a simple, stay-at-home mom. I am passionate about anything healthful, natural and practical. I love outdoor activities, gardening, arts & crafts, music and photography. I am a Filipino by blood, married to an American man. I love Asian food (of course) as well as I like yummy and healthy international food. I’ve been a vegetarian (80% vegan) for a while now and I’m happy to tell you that it’s not just greens, rice and beans… it’s about varieties. Wise and careful selection of fresh & organic ingredients are also very important in making tasty vegetarian/vegan cuisine
I am not condemning anybody that eats meat because it’s a personal choice. I can understand because I’ve had a taste of it before, except I was more of a Pesco-vegetarian (ate clean fish). I grew up in a poor family and we ate vegetables and fish more than anything else. It’s very rare for us to have meat and we consider it as a ‘treat’ ;-D. My choice is to not eat even biblically clean meat anymore because I know there are many varieties of plant-based food where I can get my nutrients from.
Many years back, as a student I had an opportunity to work at a college cafeteria (the school where I attended my first undergraduate degree). I helped in cooking and serving vegetarian food to students for several years. It was an amazing experience for me even though back then I was not a pure vegetarian. Now I can see the full picture of how God has used that experience to lead me to where I am now in my stance for healthy choices. Not only that, God has blessed me with a vegan vegetarian, health-conscious husband. He is my number one fan in the kitchen, as he always tastes and admires my cooking. I am not a professional cook by any means, but he tells me that I have the skills to cook delicious food (I think anybody can). He is one of the reasons why I created this blog, and some of my friends who encourage me as well to write down the recipes of my cooking, be it modified or my own recipe.
The goal of this blog is to share simple, wholesome and tasty plant-based recipes. The name “Eden” is based upon the name of the garden where God placed the first humans He created, Adam and Eve. In the garden of Eden they were told to enjoy and take care of their home paradise, have dominion over the creatures God had made. Fresh, organic fruits, legumes/grains and nuts are the original food God designed for His people to eat and later on vegetables became part of the diet. It was only after the world-wide flood that God allowed the people to eat biblically clean meat because of scarcity of vegetation. From then on and up to our present time, people eat more flesh/meat and that’s when the life-span of humans started to shrink, primarily because of all the diseases related to meat-eating and poor life-style. Unfortunately, even with the availability of fresh fruits, legumes/grains and nuts and vegetables, many still choose to eat non plant-based food even though they cause more harm than good.
The good news is, we can still make a difference in our health. We just have to choose and be determined to make that change happen. With dedication and little skills, we can put wholesome, plant-based menus on our table. In this blog, I try my best to give options/alternatives to ingredients that may not be commonly available in other countries.
