Melty-healthy Cheese

Are you a cheese lover? I like cheese too, but since I became more conscious of my food choices, I try to avoid dairy cheese as much as I can. This melty cheese is good alternative to real cheese. This is good for anything; veggie dip, pasta, pizza or anything you like to have cheese in it. This is my adaption to a cheese recipe from “Give Them Something Better”.

INGREDIENTS:

3 1/2 cups water, divided

2 cups raw cashews

1/2 cup roasted pepper or pimento pepper (in can or fresh)

*Roasted pepper/pimento pepper in can makes really smooth texture when blended with the rest of the ingredients. If using fresh you may want to steam/cook it just a little bit to soften the pepper.

1/4 cups quick oats

1/4 cup nutritional yeast flakes (use carrot powder if nutritional yeast is not available)

2 TBspoon cornstarch

2 TBspoon lemon juice

1 1/2 teaspoon onion powder

1/4 tspoon garlic powder (optional)

STEPS:

1. Blend all ingredients with 2 cups of water until it is well-blended and smooth for about 3-4 minutes.

2. Add remaining 1 cup of water and blend for another minute.

3. Cook over medium heat. Stir constantly until thick.
